Chicken and Vegetables Stir-Fry
This was last night’s dinner.  I had a rotisserie chicken from earlier in the week and had shredded up all of the chicken the first night to be used for meals the rest of the week.  It’s a great money saving tip since you can buy a rotisserie chicken from the grocery store for about $6.00 and there’s enough meat on there to last about 5 days (for two people).  Plus, the chicken is all cooked so that first night’s meal is simple and fast!  Chicken and Vegetables Stir-Fry
