Vietnamese Hu Tieu

I went home to visit family for Christmas and this is the yummy and very satisfying meal that I had.  Hu Tieu usually includes a serving of shrimp but I had to opt out because I have a minor allergy to shrimp.  Instead I just got more pork belly and ground pork!  Not really a bad exchange.  Oh yeah, I also really really like fried onions so there’s a lot of that too. 

I usually only get comfort food like this when I go to home or go to one of the more authentic Vietnamese restaurants in town.  My family makes really good authentic Vietnamese and Chinese dishes and I always look forward to going home for this reason as I don’t really cook these dishes; I definitely need to learn though!
